Sweet Cucumber Salad

INGREDIENTS

  • 10 Persian cucumbers
  • 6 tbsp rice vinegar
  • 4 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp mirin
  • 1 tsp chili oil (optional)

INSTRUCTIONS

Rinse and cut cucumbers, season with salt and mix, let it sit for 15 min

Rinse cucumbers with cold water a few times and pat dry with paper towels

Mix rice vinegar, honey, sesame oil and mirin in separate bowl until honey is dissolved. Pour over cucumbers and serve immediately or refrigerate
